Saliaria Kozanis

Ingredients

for the dough

  • 8 cups of flour
  • 1 cup olive oil
  • 1 cup of seed oil
  • 1 cup of orange juice
  • 1 spoon of lemon juice
  • 2 teaspoons of baking powder
  • 1 cup of powdered sugar

for the filling

  • 2 cups coarsely chopped walnuts
  • 2 spoons of sugar
  • 1 spoon of cinnamon
  • 1 teaspoon cloves

for the syrup

  • 2 cups of water
  • 1 1/2 cups sugar
  • 2 tablespoons of lemon

for the winding

  • 1/2 kilo of powdered sugar

Execution

Sift the flour into a bowl and make a hole in the center.

Let the oil burn. To understand when the oil is ready, we pour a small piece of bread crumb from the beginning. Once it turns golden, the oil is ready and we remove it from the heat.

In the bowl with the flour, alternately pour the oil with the orange juice, mixing with a wooden spoon, until they are finished. Sprinkle the dough with powdered sugar and lemon juice.

Knead for a maximum of 5 minutes, so that the dough does not harden too much, but remains fluffy.

We put an amount of dough, the size of a small tangerine, in our palm and shape small leaves.

We put a spoonful of filling there and close the edges so that they stick in small oval shapes.

Put the bibs in a pan (not oiled). We put them with the folded side down and at some distance from each other. Preheat the oven to 180°C, and bake them for about 20-25 minutes until golden brown.

Boil the ingredients for the syrup for 5 minutes.

When saliaria are warm, dip them one by one in the syrup for a few seconds and lightly roll them in the steam.
