The family business TOUSIAS has been involved in animal husbandry and cheese making for 3 generations now. In 1970, we founded our cheese factory in Avgerinos Voiou, Kozani, exploiting our own goat's milk as well as milk from local farmers in order to manufacture our authentic, traditional and local products. Today the love for what we do continues. The dedication to the quality of our products as well as the respect for consumers led us in 2013 to the creation of new facilities in Tsotyli Voiou Kozani. In a well-equipped cheese factory that meets all EU standards, we always maintain cooperation with the local breeders and focus on the high level of nutrition and living conditions of the goats and sheep, which are the most basic guarantee for our cheeses.
The production of cheese products in our cheese factory is done in the traditional way and with the appropriate machinery. Necessary ingredients for the preparation of cheese are milk, rennet and salt. First, the milk is pasteurized by applying appropriate heating to destroy harmful microorganisms, followed by the addition of rennet (yeast), salt and various chemical additives (e.g. calcium chloride) and microbial cultures, which aim to define the taste, of the aroma and the ripening time of the cheese. Rennet comes from the stomach of ruminant animals and contains enzymes promoting the coagulation of milk. The strength of rennet is determined by its acidity, chemical composition and freezing temperature.
