A large plain guarded by mountains, forms the core of the region's viticulture. Its artificial lake Aliakmonas offers the necessary moisture that the place lacks due to poor rainfall, while the climate of Kozani is one of the coldest in our country. All these factors combined lead to the production of wines with a distinct style and personality. Main varieties are the Sour black Ksinomavro, the Moshomavro and the Stavroto, while the wine heart of Kozani beats in Siatista and Velvendo, two areas with a history of viticulture and winemaking dating back at least to the 5th century AD.
In the regional unit (prefecture) of Kozani, the greatest wine interest is in the beautiful Siatista with its famous sweet sunny wine, in Velvedos with its magnificent view of the lake and for some years now in Servia.
In Siatista there are 4 wineries & 7 traditional cellars that can be visited by the informal wine tourism network "Oinoefrosyni".
The wine of Eratyra and Pelekano is also known, but it is not bottled.
Within the continental climate of the wider area, the mild local wind of the lake breeze that develops during the day softens the maximum temperature values and keeps the humidity of the atmosphere high. Thus, the plants do not suffer and the functions that are important for the quality of the grapes and the wine, continue unhindered until late in the afternoon bringing the grapes to ripen with the sugars, acids, and aromas in harmony.
The varieties
Assyrtiko, Chardonnay, Malvasia Aromatica, Xinomavro, Moschomavro, and Tsapournakos make up the varietal trunk of the estate, with which coexist several other local grape varieties that are experimentally grown.
The production of Sun Dried Liasto wine is a process that has always been carried out with respect in Siatista, as it aimed to upgrade the local wine. The winemakers spread the grapes in the shade and wait patiently until they are dehydrated, thus harnessing the grape's precious potential. This process is followed by vinification, filtering, barrel maturation and bottle aging. The reputation of Liastos wine had conquered the wine world about a century ago. The Shiatistians who traveled the world as traders and entrepreneurs transferred knowledge and experience having high culinary demands and high standards of comparison of the quality of wines.
The sweet charm of this wine, now produced in three Siatista wineries as a PGI (Protected Geographical Indication) wine, is exported mainly to the USA and secondarily to Britain with its reputation going around the world.
